The perfect lunch with Boursin

It's not often that I give a foodie post a go on here - mainly because I'm a) not the best cook and b) I'm more of a 'quick cook and eat it!' kinda gal when I get in from work. But, when there's cheese involved I'm all for creating a yummy light lunch or snack that I've never had before - whilst it's not a revolutionary  new thing to eat, it's still one that took me a while to get to grips with (wrapping parma ham around chicken, who knew it would be so hard?) oh and it includes delicious Boursin cheese, of course! So, if you fancy picking yourself up some Boursin and creating a cheesy chicken wrapped in parma ham with new potatoes and tomatoes then keep reading!

Rich and creamy Boursin cheese is the main attraction in this post, perfect for creating a light lunch or a yummy snack you can squeeze every drop of pleasure out of your relaxation moments. As I said in my previous post, they have been creating the perfect evening for the past 20 years so they know a thing or two about making an otherwise boring snack 10 times more amazing. With its mouth-watering texture and yummy burst of garlic and herbs Boursin is THE epitome of indulgence and can help you unwind after yet another hectic day at the office. 

Ingredients
Chicken breasts 
Sliced parma ham (roughly three slices per chicken breast)
Boursin Garlic and Herb cheese
Cherry tomatoes
Baby potatoes with herbs

1. Take the chicken breasts and give them a wash under the tap removing any fatty parts, using a super sharp knife slice straight down the middle ensuring you don't cut it completely the whole way through.

2. It's time to add the deliciously creamy Boursin cheese to the chicken! Simply scoop the cheese into the chicken pouch (as much as you like/ however cheesy you like) and gently fold over and close the pocket.

3. Wrap the delicious parma ham around the chicken, pulling it quite tightly until the whole piece of chicken it covered. For this you might need to use around three or four parma ham slices depending on the size of the chicken breast - the tighter you wrap the parma ham around the less the cheese will escape once it's in the oven.

4. Pop the wrapped up chicken in the oven on 200 degrees celsius for 20-25 minutes or until the juice from the chicken runs clear when you stab it with a knife. These ready-to-go packs of potatoes with herbs are a God send for when you just can't be bothered and need something super quick - these only take seven minutes! 

If you want a little juicy addition to your meal then these yummy cherry tomatoes still on the vine are the best and they also add a pop of colour to your lunch as well. Et voila! you've rustled up a delicious meal for one or two, or as many people as you like and it's one of those light lunches you can take out and enjoy in the park.
